Potato Puffs

2 CUP(S) mashed potatoes
3 eggs, beaten
1 CUP(S) shredded cheddar cheese
1/4 CUP(S) bacon bits
1/4 CUP(S) chopped chives
pepper (to taste)
1/4 CUP(S) Parmesan cheese, shredded
Sour Cream (as a topping)

Combine the mashed potatoes, eggs, cheddar cheese, bacon bits and chives in a bowl.
Season with pepper if desired.
In a greased a muffin pan, place a heaping spoonful of the mixture into each muffin cup.
Sprinkle the top of each with Parmesan cheese.
Bake for 30-35 minutes at 400°F or until golden brown.
Cool for 5 minutes
Serve warm with sour cream.

Special Notes:

~You can cheat and use instant mashed potatoes to make these.
~You can pre-mix all the ingredients the night before and refrigerate them to bake the next day.
