Shredded BBQ Crockpot Beef

Servings: 10 - 12 sandwiches

4 LB(S) Beef Chuck Roast
3 TBSP packed brown sugar
2 1/2 TSP paprika
2 TSP garlic powder
2 TSP onion powder
1 1/2 TSP sea or kosher salt
1 TSP black pepper
1/2 CUP(S) mustard
2/3 CUP(S) beer
1 bottle open pit BBQ sauce

Mix brown sugar, paprika, garlic powder, onion powder, salt, pepper into a rub and set aside.
Cover one side of meet with 1/2 of the mustard and 1/2 of the rub.
Flip meat and do the same on the other side.
Add beer around the meat but not on it.
Cook in crock pot on high until meat is tender about 5-6 hours.
Remove meat to chopping board and shred.
Clean out crock pot and add meat back to pot.
Add BBQ sauce and cook for 1 more hour.
Serve on toasted buns as sandwiches.
